When we first moved to Madison my mom and two sisters-in-law came to help me organize our new place. (On a side note: my brothers’ wives are awesome and have come and helped me unpack several times. This is just one of the reasons I am so lucky to have them!) So, my mom volunteers to walk to State Street to get some lunch for us hungary workers. Apparently her internal compass was a bit off and HOURS later, my mother returns, Cosi salads in hand. I don’t know if it was due to my ravenous hunger or the fact that this is pretty much the best salad ever, but either way I was hooked. When I saw a recipe for this salad over at Brown Eyed Baker, I needed to try it. It must be noted that Cosi should not worry about my business; I would return for the flatbread alone.
Cosi Signature Salad (thanks to Michelle)
Salad:
8 ounces spring mix
2 cups red grapes, halved
2 pears, chopped
2/3 cup dried cranberries
1/2 cup shelled pistachios
2 ounces blue cheese
Dressing:
4 teaspoons minced shallot or onion
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup red wine vinegar
1/2 cup olive oil
Combine all salad ingredients in a large bowl. Whisk together dressing ingredients.
Pour dressing over salad & toss to coat. Serve immediately.
Does anyone else forget how absolutely delicious pistachios are? My new favorite for sure.

P.S. What I Wore This Week: My favorite maroon ruffled shirt. I saw a string unraveling and almost shed a tear. A new shirt from NY&Co that was only 9 bucks. Yay. *Note: Other outfits worn this week were not sharable. Remember in the movie Clueless where Cher polaroided herself before everything? Now I know why.
